How do microorganism survive under adverse condition in food?
The adverse condition in food like extreme pH, Aw, Eh, nutrients and temperature. For example, the suitable growth range of bacteria is between pH 4-9. But some bacteria still can survive out of the pH range. Why?? In this case, i'm not mean any extremephiles.

- microorganism may have the ability to survive or to stay alive even in extreme condidtion. some may have a complex substance which manage to maintain their pysiological activity.
